He also indicates the importance of organic products in the distribution of fresh produce; "The variability of the markets is enormous, from markets that barely work in eco, to markets that are already very close to 10-12% some of wich have no apparent ceiling".
Finally, he explains what role the food fairs play in the distribution sector; "The fair is key", "It is where Spanish producers are, will be, and where European distribution comes continuously and is a part of their calendar".
