Arabatxo, a new traditional dessert from Alava
The sweet is made with eight products from the province.
The Association of Artisan Patisseries and Confectioners of Alava has created Arabatxo, a new sweet made with eight products from the region, which aims to become a traditional dessert of the province.
Arabatxo is made from a base of sponge cake with Rioja Alavesa olive oil foam, Álava honey and Añana salt covered with a whipped cream of Álava txakoli, another layer of sponge cake and a cream of Rioja Alavesa wine topped with a crunchy Alavese potato and Rioja wine biscuit. The last two layers are formed by a mousse of Idiazabal cheese from Alava and a thin layer of strawberry jam from Alava.
The president of the Association, Luis Lopez de Sosoaga, explained that "we were thinking about how to put it together, but from the very beginning we were very clear that we wanted to use local products".
