BICA 2027 to host the 6th National Artisan Bakery Championship
The most prestigious competition in the Spanish artisan bakery sector is set to feature in the programme for BICA 2027, the new meeting place for professionals from the artisan bakery, patisserie and ice-cream industries.
BICA, Bakery and Ice Cream Attraction, the new themed trade fair aimed at professionals in the artisan bakery, patisserie and ice-cream sectors, is hosting the 6th National Artisan Bakery Championship (CNPA) from 16 to 18 February 2027 at IFEMA MADRID, as part of Anuga Select Ibérica.
Organised by the Spanish Confederation of Bakers, Pastry Chefs, Patissiers and Related Trades (CEOPPAN), it is the most prestigious artisan bakery championship in Spain, celebrating technical excellence, creativity and innovation. In previous years, the competition has been won by renowned professionals such as José Roldán, Toñín Pérez, Daniel Flecha, Samuel Suárez and Diego Marín.
In accordance with the competition rules, the entry period will remain open until 30 November 2026. The selection process for the finalists will be carried out by a committee of experts from CEOPPAN, which will assess all applications and take into account the candidates’ professional track record, as well as their knowledge, skills and technical expertise in bakery, patisserie and artistic creations.
During the grand final, to be held at BICA, participants will be required to demonstrate their skills in various technical challenges, including the production of four types of bread (sourdough, a bread of their own choice, a loaf or baguette, and a nutritional bread), laminated and fermented rolls, ten savoury snacks, an artistic creation of their own choice —which must be assembled and finished during the competition— and the final presentation on the table.
In addition to the title of National Artisan Bakery Champion, the judging panel will award several special prizes for the best presentation, the best rolls, the best breads and the best artistic creation.
BICA, the stage for major competitions in patisserie, bakery and ice-cream-making
The CNPA event reinforces BICA’s commitment to offering a high-calibre programme of activities, featuring competitions, demonstrations, live tastings and professional networking opportunities, which make the exhibition the leading meeting point for the artisan bakery, patisserie and ice-cream industries.
In addition to this championship, BICA will also be hosting the Best Artisan Chocolatier in Spain, the Ice Cream of the Year 2027 and the Guía Arte Heladero Mejores Heladerías de España (Guide to Spain’s Best Ice Cream Parlours) 2027–2028.
These competitions will showcase the excellence of professional artisans from all over Spain, making BICA a prominent platform for talent.
