Taste the Winners to showcase Spain’s finest artisanal creations at BICA 2027

IFEMA MADRID’s new trade fair for the bakery, patisserie and ice-cream sectors will offer visitors the chance to sample award-winning chocolates, biscuits, panettones, traditional roscónes, croissants and ice-cream, served by their creators..

The finest flavours of Spanish artisan pastry-making will take centre stage at BICA, Bakery and Ice Cream Attraction, the new trade fair dedicated to bakery, patisserie and ice-cream to be held from 16 to 18 February 2027 at IFEMA MADRID, as part of Anuga Select Ibérica the project promoted by IFEMA MADRID and KOELNMESSE.

One of the main highlights of this first edition will be Taste the Winners, an initiative designed to introduce visitors to some of the industry's most acclaimed and celebrated creations. This exclusive space will bring together award-winning creations from the leading national competitions in pastry-making, bakery and ice-cream, offering a unique tasting experience for professionals and specialists.

Visitors will be able to discover and sample a selection of Spain’s finest chocolates, gourmet ice-creams, biscuits, croissants, artisan panettones and roscónes, presented by the makers themselves. Among the professionals already confirmed are well-known names like Raúl Bernal (Lapaca), Alexandra Navarro (Exalta-Sant Llehí), Éric Ortuño (L’Atelier), Abel Castaño (Golimbeo), Arturo Salvador (Sukar), Jesús Quirós (La Rosa), Migue Señoris (Gelática), Rafel Aguilera (Cal Jan), Albert Soler (Can Soler), Pol Marginedas (Es Neu), Mario Masiá (Masiá), Albert Roca (El Gelat) and  Paloma Silvestrin (Doble Uve), as well as other leading representatives of national artisan excellence.

Taste the Winners will form part of La Isla de los Campeones, an area situated at the heart of the fair which will host some of BICA’s main activities. In addition to this tasting area, visitors will be able to attend two key industry events: the third edition of the Best Artisan Chocolate in Spain Competition and the launch of the Guía Arte Heladero Mejores Heladerías 2027/2028 (Guide to the Best Ice Cream Parlours 2027/2028), promoted by the Vilbo-Books For Chefs Group.

A trade fair to discover trends and generate business

The Taste the Winners gastronomic experience is just one of the many events making up BICA’s programme. The new trade fair has been launched with the aim of bringing together companies, artisans and professionals from the bakery, patisserie and ice-cream sectors under one roof, combining innovation, training, competitions, live demonstrations and networking opportunities.

Held as part of Anuga Select Ibérica, BICA will be share the space with other specialist sectors, together forming a comprehensive platform for the food and drink industry in the Iberian Peninsula. These include Meat Attraction, which focuses on the meat sector, as well as areas dedicated to beverages,organic products, fine food, dairy products, auxiliary industries, and fresh and frozen products, fostering synergies and business opportunities across all the segments represented.
