InterSICOP 2024 once again hosts National Artisan Bakery Championship

15 November is the deadline to register for the fifth edition of the event, organised by CEOPPAN.

InterSICOP 2024 - the International Bakery, Pastry, Ice Cream, Coffee and Equipment Show organised by IFEMA from 17 to 20 February at Feria de Madrid - will once again be the setting for the National Artisan Bakery Championship, now in its fifth year.

A panel of experts from the Spanish Confederation of Bakery, Confederación Española de Panadería, Pastelería, Bollería y Afines (CEOPPAN), will analyse and assess all the entries and unanimously decide who are the most qualified candidates.

Bread, Viennese pastry, and artistic piece tests

During the competition, the competitors will have to prepare, knead, form and bake breads (sourdough, free choice, loaf or baguette, and assorted bread rolls), flaky and fermented pastry products, savoury snacks (10 pieces of up to 120 grams final weight including filling) and an artistic piece on a free theme with a minimum height of 60 cm and using at least three different types of dough. Finally, they will have to present the final table, in which the order in which all the products are presented, harmony, homogeneity, visual impact and volume will be particularly valued.

The work of the candidates will be evaluated by a jury presided over by Jesús Sánchez, fifth generation baker, manager of Panaderos Artesanos J. Sánchez and technical director of the national team Los Espigas. The other members are José Roldán (winner in 2015 of the first Spanish Baking Championship and Los Espigas selector), Mª Cruz Barón (deputy director of the Baking School Barcelona Sabadell, the baking school of the Bakers' Guild of the province of Barcelona) and Matteo Cunsolo (president of Club Richemont Italia).
