The Butcher's shop, the space at Meat Attraction for specialised trade
From 6 to 8 March, Meat Attraction 2023, with the collaboration of Educarne, is hosting The Butcher's Shop, the exhibition area of solutions and novelties at the service of the specialised meat and meat products trade, which also brings together innovation and activities to raise the profile and prestige of the trade and contribute to the evolution of professionals.
Following last year's success, The Butcher's Shop will highlight the cutting expertise and craftsmanship of specialised professionals such as butchers, charcutiers, poulterers and specialised butchers, traditional trades that are reinventing themselves. This is a space where world-class figures will be presented in eminently practical actions, to attract the general public and increase the influx of the meat industry at a national level. With all this, this space will offer visitors a practical and attractive programme that will make their visit more dynamic.
The Butcher's Shop will host The Butcher's Shop of the Future, which will become a permanent meeting point for butchers, charcutiers, poulterers and specialised butchers at the fair. It will reflect the establishment of the near future, in terms of design, management, control and digitalisation.
Programming at The Butcher's Shop
Once again this year, Educarne joins Meat Attraction to organise all the activities aimed at professionals from the specialised meat and meat products trade, which will also take place in The Butcher's Shop.
On this occasion, the international guest visiting Meat Attraction is Mickaël Chabanon, French butcher, winner of the MOF (Best Worker in France) award and world champion in the speciality of beef at the last World Butcher's Challenge in Sacramento (USA).
The best butchers, butchers, charcutiers, poulterers and specialised butchers will also be awarded prizes and will be able to demonstrate their skills in two competitions at The Butcher's Shop.

From 10.30 a.m. to 12.00 p.m. | Young Butchers Competition
After the success of the first edition, the competition is being continued with the aim of highlighting the new generations in the sector and promoting generational change in the industry. This year, the three butcher candidates, under 35 years of age, who pass the pre-selection phase, will compete in two tests:
- Iberian pork quartering.
- Presentation of artisanal poultry meat products.
From 13:00 to 14:30 h. | Xesc Reina Masterclass
Showing the high national level in the industry, this year the fair will welcome the father of the reinvention of sobrasadas, the most creative, mediatic and avant-garde artisan charcutier in Spain: Xesc Reina.
In this way, this "creator of flavours and sausages" will delight the audience with an innovative masterclass, showcasing new artisan scenarios.

From 13:00 to 14:00: Meat pastry tasting with Mickaël Chabanon.
Mickaël Chabanon, French butcher, winner of the MOF award (Best Worker in France) and world champion in the beef speciality, will present some of his meat specialities, as well as giving a tasting of some of them.
From 15:00 to 18:00 h. Beef butchering exhibition Mickaël Chabanon - World Champion in Beef preparation
The winner of the award for the best beef preparation at the last World Butcher's Challenge in Sacramento (USA) in 2022, will be on hand to perform the same demonstration that made him champion a few months ago at the prestigious international competition. Those present will be able to see first-hand, and live, the cutting of an ox carcass.

From 10:30 to 11:30 a.m. : Women's leadership in the meat industry
The IV Meeting of Women, organised by Educarne, will have three exceptional protagonists who will talk about their experience in the industry, under the "female leadership in the meat industry” theme.

From 12:30 to 14:00 h. | Best Artisan Burger Competition
After the success of the first edition in terms of attendance and participation, the competition is once again being held to showcase the true artisan hamburger of Spain.
As in the first edition, a pre-selection will be made among specialised retailers nationwide, and only four will reach the final at Meat Attraction.
